There are so many ways to reuse your pickle brine once you finish your delicious pickles! Below are some of my favorite recipes to utilize your leftover Deliciously Global pickle brine!

First, Strain your pickle brine to remove any leftover spices in the brine

Make a salad dressing:

In a jar, combine:

  • 1/4 cup pickle brine with 1/4 cup olive oil, and 1/4 cup of your favorite vinegar
  • 2 TBSP spicy mustard
  • Salt and Pepper
  • Shake vigorously until combined
  • Optional: combine finely chopped pickled shallots, beans, garlic, jalapeƱo, cucumbers, and/or any other pickle for an extra crunch in your dressing!

Pickle Brine Chicken

  • 1 lb chicken thighs
  • 2/3 cup strained pickle brine of your choice (I like to use the leftover jalapeno brine for a bit of a kick!)
  • 1/4 cup olive oil
  • 1 1/2 tsp salt
  • A sprig of an herb of your choice (such as thyme or rosemary)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper

Whisk ingredients together until combined. Place chicken into a gallon bag with brine and allow to sit in the brine for 1 hour up to 4 hours. Remove chicken from brine and pat dry, discard leftover brine. Then, grill chicken or pan fry in canola oil until an internal temperature of 165 degrees.

Nostalgic Watermelon Rind Apple Pie Old Fashioned

  • 2 oz Whiskey or Rye
  • 1 TBSP of Watermelon Rind Brine
  • 1 tsp Sweet Vermouth
  • 1 tsp Simple Syrup
  • 4 Dashes of Your Favorite Bitters

Stir to combine, pour over a large ice cube, and garnish with 2 chunks of Pickled Watermelon Rind
